Butter poached scallops with truffle shavings

With Tasmanian scallop season underway, enjoy these tasty morsels cooked in locally made butter topped with shavings of fresh truffle. As an alternative or for an extra hit of truffle flavour, cook the scallops in truffled butter from Southern Sky Cheese Company or Tasmanian Butter Co.

Ingredients

300g butter (Southern Sky Cheese Company, Tasmanian Butter Co)
1 dozen large scallops (George Town Seafoods)
A squeeze of lemon
Salt (Tasman Sea Salt) and pepper
Truffle shavings (Tamar Valley Truffles, Tasmanian Natural Garlic and Tomatoes)

Note: The butter can be infused with spices and other seasonings.

Directions

Season scallops with taste. Heat butter in pan and allow scallops to cook slowly poaching in butter for five to six minutes.

Remove and plate scallops with shavings of truffles. Season with salt, freshly ground pepper and a squeeze of lemon juice.
