Langdale Farm is a small family business owned by Oliver and Fiona Stocker and based in the beautiful Tamar Valley of northern Tasmania. We breed and raise Wessex Saddleback pigs free range on our five acre property.
At our market stall you will find a selection of delicious Saddleback pork cuts, widely recognised as an incredibly succulent and flavoursome pork. Besides roasts, belly, and Scotch we also make and sell our own bacon and sausages.
Oliver learnt how to make English style bacon by talking to butchers in his home county of Suffolk. He uses English ale, treacle, salt, herbs and spices during the curing process, and smokes it using apple wood from a local orchard. This makes for a very different style of bacon, smoky and flavoursome, and free of additives and nitrates.
Our sought-after pork sausages are also made here on the farm by Oliver. They are made using premium grade pork shoulder, with a small amount of breadcrumbs from a local supplier, herbs and spices. We have small quantities of gluten free sausages available – these are sold frozen. All our sausages are free of nitrates and other additives.
You can purchase our sausages hot off the barbecue at markets, served in a sourdough roll with farm-made relish and caramelised onions.
We are delighted to be able to offer our delicious pork product for sale at Harvest Market. You’ll also find us at annual events around northern Tasmania where we add to the aromas of the occasion.
