Rod has extensive experience designing, creating and launching some of Australia’s most iconic specialty dairy and food products. He has more than 35 years of experience, passion and dedication to his craft.

Under Rod’s direction, Southern Sky Cheese is turning out special and innovative products, flavours and textures. The passion for connecting with the customer is a major driver, as is the incredible abundance of high-quality produce available for Southern Sky Cheese to work with in Tasmania.

Southern Sky’s hand-selected and artisan specialty cheese and dairy products, with their beautifully balanced flavours and textures, showcase just how good dairy can be, and its limitless appeal to all palates.

Rod is proud to be supplying his products in Tasmania and interstate. He also produces a range of bries, club cheddars, chevres, butter and Persian fettas for Launceston-based Tamar Valley Truffles.

Initial production started in October 2012 at Hillwood, 20 minutes north of Launceston.

A few years ago the factory was moved to Invermay, allowing for much needed growth. Sharing a facility with Westhaven Dairy adds another synergy to the company for new products and greater volumes.

Since those small beginnings in 2012 the range has expanded greatly.

It includes layered and flavoured bries, vintage club cheddars, persian fettas and the keenly-sought Alpine range, including Gruyere, Raclette, Morbier and Tilsit. Southern Sky also produces market favourites Traditional Style, and Garlic and Hickory Smoked Halloumi as well as other specialty cheeses and butter lines.

And, if you’re into blue cheese, Southern Sky has a fantastic Gorgonzola-style blue, Piquante Blue, and a Beeswax Blue, a special creation enhanced by the flavours of honey. If those two don’t entice you, there are another four to try.

 

The full range is available from our shop front at the Invermay site, 27 Montague Street, and from select independent supermarkets around Tasmania. There are also distributors in Victoria, NSW, Queensland and South Australia.
