Meet Willie and Catherine from Seven Sheds Brewery
From writing about craft beers to brewing the brew and achieving top honours for best ales, the journey for Willie Simpson and Catherine Stark of Seven Sheds Brewery has been marked by local ingredients that translate into beer that is full of hops, malted barley and even chocolate.
Seven Sheds produces award winning brews that taste of Tasmania. Local ingredients and collaboration are the hallmark of the brewery. Most of the hops in the various brews are from Bushy Park in the Derwent Valley. The local barley is malted at Quoiba near Devonport.
This small, artisan brewery and meadery based at Railton in Tasmania’s north-west, was opened in April 2008 by Catherine and Willie. Catherine was working as economic development officer for the Kentish Council and Willie was writing about craft brewing. Today, their property is home to the brewery, a purpose-built tasting room and a boutique hop garden. Seven Sheds specialises in traditional ales brewed in shallow open fermenters which are bottle- and keg-conditioned without filtration or additives of any description (and vegan friendly). All beers are naturally carbonated by secondary fermentation in both bottle and keg.
Seven Sheds’ regular brews include the flagship Kentish Ale, Paradise Pale, and Willie Warmer, together with several seasonal, annual and one-off brews appear at their Harvest Launceston stall on a rotating basis. Seven Sheds cider and mead is also available. Seasonal and one-offs in the past showcase their belief in local collaboration and have used local ingredients including chocolate, whisky and raspberries.
Make the pilgrimage to Seven Sheds for tastings, direct sales, and tours of the hop garden and brewery (by appointment). Undercover outdoor seating allows visitors to enjoy beer by the glass and they are encouraged to bring their own picnic.
